Chocolate chip cookies
Ingredients (servings 20 cookies):
• 2 cups almond/oat flour
• 1/4 teaspoon salt
• 1 egg
• 1 egg yolk
• 2/3 cup oil
• 1 ¼ cups of brown sugar
• 1 ½ cups of chocolate chips
• 1 teaspoon baking powder
• 1 teaspoon vanilla extract
Preheat oven to 350 degrees F. In a large bowl mix together the almond/oat flour, baking powder and salt. In another bowl mix together the oil, brown sugar, egg and egg yoll and vanilla extract for 5 minutes until all ingredients are combined and the mix has a smooth texture.
Pour in the mix with the almond/oat flour and dry ingredients until combined. Add the chocolate chips and mix with a wooden spoon until all the chips are well distributed in the mix. Place a 1 inch cookie dough ball and place it on the cookie sheet (make sure each cookie dough ball is separated 2 inches apart).
Bake for 10-12 minutes, or until the edges of the cookies acquire a golden tone.
Take the mold from the oven and let them cool for about 15-20 minutes.
