Oats and almond flour chocolate chips

Another guilt free & gluten – free treat!
Ingredients (servings 16-20 cookies):
• 1 1/4 cups almond flour
• 2/4 cup of oat flakes
• 1/4 cup chopped dark chocolate / dark chocolate chips (you can mix in cacao nibs as well)
• 1/2 teaspoon baking powder
• 1/4 teaspoon salt
• 1 egg
• 1/3 cup brown sugar
• 3 Tbsp coconut oil, melted
• 1/2 Tbsp of extractt
Instructions:
Preheat oven to 375 degrees F (190 C).
In a large bowl put together the almond flour, dar chocolate chips, baking powder, salt and brown sugar.
In another bowl beat the egg until uniform in color and doubled in volume. Pour in the coconut oil and vanilla extract and then add the rest of the dry ingredients and mix together.
Place a 1 inch cookie dough ball and place it on the cookie sheet (make sure each cookie ball is separated 2 inches apart).
Bake for 10-12 minutes, or until the edges of the cookies acquire a golden tone.
Take the mold from the oven and let them cool for about 15-20 minutes. Enjoy!
